  Tilbyder skal utvikle og drifte serveringssteder med stabil drift av god kvalitet, og bidra til å øke antall besøkende og øke trivselen på museene. Oppdragsgiver ønsker å ha en driver som utvikler et godt menyvalg til gjestene beste, og som er kreativ og ser muligheter og løsninger som vil gjøre serveringsvirksomheten i SLM til et godt besøkt tilbud på museene. Oppdragsgiver forutsetter et tett samarbeid med driver for utvikling av serveringstilbudet ved museene. Det er et mål at serveringsvirksomheten skal bidra til økt besøk ved museene. Utvikling av konsept og drift skal tilrettelegges for best mulig å ivareta oppdragsgivers krav og målsetting. Matkonsepter – mat og innhold Oppdragsgiver ber om tilbud på ulike serveringskonsepter. Maihaugen. Kafékonsept på dagtid, der minimum servering skal være gjærbakst, svele, påsmurt brødmat, varme og kalde lunsjretter, samt ferske kaker. Menyer for lunsjservering bussgrupper og gjester som deltar på konferanser eller andre type arrangement. Menykonsept til selskap og spesialtilpasset program i samarbeid med oppdragsgiver. Maten bør være sunn og vi er opptatt av tradisjonell norsk mat, og bruk av lokal- og økologisk mat. Vi er stolte av norske råvarer og tradisjonene fra det norske kjøkkenet. Det understrekes at dette er minimumskrav, og at driver står fritt til å utvikle serveringstilbudene ut over dette. Det er viktig å nå det lokal publikum og da er kafeens meny på hverdag og søndag viktig. Kafeene skal ha et godt utvalg av drikkevarer, blant annet gode kaffedrikker, ordinær kaffe, juice, mineralvann, øl og vin mv. Gjestene kan gjerne oppfordres til å ta med mat/drikke ut friluftsmuseet, så det må tilrettelegges for enkeltretter som er enkle å bringe med seg ut av kafélokalet. Kulturhuset Maihaugsalen har i gjennomsnitt 2 arrangement i uken på kveldstid. Kafeen skal holde åpent minst 1. time før forestillingsstart og holde åpent dersom det er pause i forestillingen. I perioden 1. juni – 15.august er det sjelden forestillinger i kulturhuset. Det vises til ytterligere krav i konkurransegrunnlaget.
